If you’re struggling to use up a glut of redcurrants, I can recommend this recipe! (Lynda Gibbins)
Ingredients
10oz redcurrants, washed
5oz caster sugar
75cl bottle gin
Instructions
Crush the currants with the sugar, add the gin, then put the mixture into a Kilner-type jar and seal the lid. Keep in a cool, dark place for 2-3 months. Shake it daily for the first month and then as and when you remember.
Strain it through a sieve and then through muslin until clear. Bottle and enjoy! The fruit residue can be used to make a dessert such as a boozy crumble…
